Spice Up Family Time With A Fiesta This Raya

Malaysians, it’s been two months since we started the Movement Control Order (MCO) which means that it’s been more than 60 days of quality family time (and mother’s everywhere are rejoicing)! Consequently, Ramadan this year has been a little quieter and more meaningful as we’ve had more time to reflect and spend it with the people that matter this year instead of being caught up in the mad rush of everyday life. 

With the safety measures that we’ve all been advised to follow even after the MCO is lifted, it seems like quality family time might be on the cards for a little longer which is great because Raya is just around the corner and that means it’s time to start prepping!

If you’re wondering what you can do with the fam in the coming days, here’s a suggestion: get the troop together and have a Family Cook-off! You can divide yourself into teams or do it individually. You just might discover a hidden talent which you’ll be able to flex during Raya this year. 

Here’s a simple three course meal that you can whip up :

Appetiser – Salsa Chips & Dip

Salsa:
3 tomatoes
1 onion
cilantro
salt
pepper

How to:
All you have to do for the salsa is chop and dice your tomatoes and onion, add a dash of lemon juice and salt and pepper to taste, and throw in your cilantro.

Avocado Dip:
2 Avocados 1 tbsp greek yoghurt Salt

How to:
Mash your avocados, mix in your greek yoghurt and add salt to taste and you’re good to go! Serve your salsa and dip with some tortilla chips and you’ve got the perfect appetiser.

Main Course – Chicken Fajitas

Marinade To Soak Your Chicken In:
65 ml calamansi lime juice 65 ml orange juice 2 tablespoons of olive oil 2 garlic cloves (chopped or minced) 1 tablespoon of chili powder (or cumin powder) 1 tablespoon of salt ½  tablespoon of black pepper

How to:
Place Marinade ingredients in a large bowl and mix. Add chicken, toss well to coat. Marinade for 1 hour to 24 hours (or freeze immediately then defrost overnight).

  Fantastic Fajitas:
700g of skinless chicken thighs or 2 large chicken breasts, cut in slices 2 tablespoons of olive oil 3 capsciums and sliced (go crazy with the colours!) 1 large onion (brown, purple, yellow or white – your choice) Bonus: add a few slices of cheese on there!

How to:
Heat 1 tbsp oil in a large skillet over medium high heat. Add chicken and cook for 3 to 4 minutes until caramelised. Turn and cook the other side for 3 – 4 minutes. Remove onto a plate, cover loosely with foil. Rest for 3 minutes then slice.

On the same skillet, heat 1 tbsp oil over high heat until smoking. Add vegetables to cover the base of the pan in a single layer without too much overlapping. Spread out, leave for 45 seconds (to char it).Toss quickly, sprinkle with salt and pepper. Leave 45 seconds, toss and remove onto a platter and repeat with remaining vegetables.  

To serve:
4-8  tortillas (or as many as you want) 1 Avocado mashed (sprinkle salt and pepper) Sour cream (add in chopped chives and crack of pepper) Fresh calamansi lime or lime wedges

How to:
Warm your tortillas, add some avocado, sour cream and a drizzle of lime, pack on your chicken and veg and enjoy!

Dessert – Creme Caramel 

Caramel Sauce:
¾ cup white sugar ½ cup water

How to:

Firstly, preheat your oven at 180 degrees for about 20 minutes. While your oven is heating up, put a pan on the fire on low heat and stir the water and sugar together till the sugar has dissolved. Once it comes to a boil, stop stirring and allow to boil until the mixture turns into a golden caramel syrup and take the mixture off the heat.

Divide the caramel mixture into five ramekins placed on a deep dish oven tray.

Custard:
4 eggs ¼ cup white sugar ½ cup cold water 374 ml evaporated milk

How to:
In a bowl, whisk the ingredients together till you get a smooth mixture and divide the mixture between the five ramekins. Carefully pour boiling water into the oven tray till it reaches halfway up the ramekins. Pop the tray into the oven for 25-30 minutes or until the custards have set.

Remove the ramekins from the dish, let it cool down, then pop them into the fridge to chill. To serve, run a butterknife round the sides of the ramekin, cover the top with a plan, turn it over  and voila! You’ll have a sweet ending to your home cooked meal.
